When
I get the urge for Mexican food, my first thought is, “It’s gotta be good.”
Now, “good” is certainly a relative term, but compared to so many of my Mexican
food experiences, Pueblo Solis ranks up at the top of the list.
I’ll
start with the highlight of the meal — Fajitas. Served in the traditional way
on a hot cast iron skillet with onions and peppers, the dish was superb! What
makes these Fajitas different is the way the steak is prepared. I knew there
was something different — I could immediately detect that the meat had been
roasted. In fact, rather than cooking the meat in a skillet, it’s roasted, then
marinated. It was perfectly seasoned and extremely tender.
Served
with cheese, chopped tomatoes, beans and rice — the portion was huge, so you
might want to consider splitting Fajitas with a friend, and perhaps ordering a
salad or a cup of soup.
And
about the Margarita — while I’m not a fan of tequila, the Margarita was very
good. Just on the verge of heavy alcohol, it was not too sour and not too
sweet. If you’re a fan of tequila and Margaritas, you’ll probably love this
one.
While
the food is the most important ingredient of a good meal, ambiance ranks right
up there at the top of the list. Pueblo Solis provides a wonderful atmosphere
for an authentic Mexican meal. Colorful walls, beautiful place settings in a
casual atmosphere — it’s a comfortable place to gather with friends for a great
meal.
